1.黑鱼杀好洗干净,从尾部把两片肉片下,中间的骨头和鱼头剁碎备用。

2.鱼肉剔掉刺。

3.从鱼尾部开始片鱼片。

4.片成蝴蝶片。

5.把片好的鱼肉用清水反复洗至鱼肉发白,然后滤干水分。

6.备好酸菜、酸萝卜、泡椒。

7.干辣椒切碎,生姜切成。。片,蒜头拍碎备用。

8.豆芽去根洗干净备用。

9.金针菇去根洗干净。

10.锅烧热,放入适量色拉油和熟猪油,把干辣椒、生姜片和蒜头放进去煸炒出香味。

11.把鱼头鱼骨倒进去爆炒一下,倒入适量料酒。

12.倒入煮开的高汤,再放入适量胡椒粉,用中火慢炖。

13.炖鱼骨汤的时候,在鱼片里放入一个鸡蛋清和适量盐(可以稍微多一点)抓捏均匀,然后放入少量淀粉抓捏上浆。

14.另起锅烧热,放入适量色拉油和熟猪油,把酸菜、酸萝卜和泡椒倒进去炒出香味。

15.把炒好的酸菜倒入鱼骨汤里炖煮。

16.再分别倒入金针菇和豆芽。

17.另起锅烧开水,放适量盐,把腌好的鱼片放进去用筷子快速划开,放入适量料酒,鱼肉发白捞出(10秒左右)。

18.把鱼片捞出后放进炖好的鱼骨汤里。

19.出锅装盘,锅烧热放油,放入适量青花椒,煸炒出香味后把热油浇在鱼肉上,放上香菜完成。
